Apple Cranberry Coleslaw
Ingredients:
• 4 cups shredded green cabbage
• 1 large apple (Granny Smith or Honeycrisp), thinly sliced
• 1/2 cup dried cranberries
• 1/4 cup shredded carrots
• 1/4 cup sliced almonds (optional)
For the Dressing:
• 1/2 cup mayonnaise
• 2 tbsp apple cider vinegar
• 1 tbsp honey
• 1 tsp Dijon mustard
• 1/4 tsp salt
• 1/4 tsp black pepper
Directions:
1. In a large bowl, combine cabbage, apple, cranberries, carrots, and almonds (if using). Toss gently.
2. In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth.
3. Pour the dressing over the coleslaw mixture and toss to coat.
4. Chill in the refrigerator for at least 30 minutes before serving.
