Red Velvet Strawberry Cheesecake 
Ingredients 
For the Red Velvet Cake Layer:
1 1/4 cups all-purpose flour
1 cup granulated sugar
1 tbsp cocoa powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup vegetable oil
1/2 cup buttermilk, room temperature
1 large egg

1 tbsp red food coloring
1 tsp vanilla extract
1/2 tsp white vinegar
For the Cheesecake Layer:
16 oz cream cheese, softened
2/3 cup granulated sugar
2 large eggs
1 tsp vanilla extract
For the Topping:
1 1/2 cups fresh strawberries, hulled and halved
1/4 cup strawberry jam, warmed
Instructions

For the Red Velvet Cake Layer:
Prepare the Batter:
Preheat your oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.
In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.
In a separate bowl, whisk together the vegetable oil, buttermilk, egg, red food coloring, vanilla extract, and white vinegar until well combined.
Add the wet ingredients to the dry ingredients and mix until smooth.
Bake the Cake:
Pour the red velvet batter into the prepared springform pan, spreading it evenly.
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool completely in the pan.
For the Cheesecake Layer:
Prepare the Cheesecake Batter:
In a large bowl, beat the softened cream cheese until smooth.
Add the sugar and beat until combined. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
Bake the Cheesecake:
Preheat the oven to 325°F (160°C).
Pour the cheesecake batter over the cooled red velvet cake layer in the springform pan, smoothing the top.
Bake for 45-50 minutes, or until the center is set and the edges are slightly golden.
Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.
For the Topping:
Top the Cheesecake:
Arrange the halved fresh strawberries on top of the chilled cheesecake.
Brush the strawberries with the warmed strawberry jam for a glossy finish.
Serve:
