Crockpot Cheesesteak Potato Casserole
Ingredients:
For the Cheesesteak Potato Casserole:
1 1/2 lbs russet potatoes, peeled and thinly sliced
1 lb beef sirloin, thinly sliced
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 medium onion, thinly sliced
2 cloves garlic, minced
1 cup beef broth
1 tsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika
2 cups shredded provolone or mozzarella cheese

Prepare the Ingredients:
In a large skillet over medium-high heat, lightly brown the thinly sliced beef sirloin for 2-3 minutes. Remove from the skillet and set aside.
In the same skillet, add the sliced bell peppers, onion, and garlic. Sauté for 3-4 minutes until the vegetables are slightly softened.
Layer the Crockpot:
In a crockpot, add a layer of the sliced potatoes, followed by a portion of the sautéed vegetables and browned beef.
Repeat the layers, ending with a layer of potatoes.
Add the Broth and Seasoning:
In a small bowl, mix the beef broth, Worcestershire sauce, salt, black pepper, and smoked paprika. Pour the mixture over the layers in the crockpot.
Cook the Casserole:
Cover the crockpot and cook on low for 6-7 hours, or until the potatoes are tender and the flavors have melded together.
Add the Cheese:
During the last 30 minutes of cooking, sprinkle the shredded cheese over the top. Cover and allow the cheese to melt completely.
Serve:
Serve the Cheesesteak Potato Casserole warm, garnished with additional sliced green onions or parsley if desired. This dish is hearty, comforting, and perfect for a cozy family dinner.
