Banana Bread Cake with Cream Cheese Frosting
Ingredients:

For the Cake:
1 ½ cups mashed ripe bananas (3-4 bananas)
2 cups all-purpose flour
1 tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
1 cup granulated sugar
½ cup brown sugar, packed
2 large eggs
1 tsp vanilla extract
½ cup buttermilk (or milk with 1 tbsp lemon juice/vinegar)
For the Frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
3-4 cups powdered sugar (to taste)
1 tsp vanilla extract
2-3 tbsp heavy cream (optional)
Directions:

1. Preheat Oven & Prepare Pan:
Preheat to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
2. Make the Cake Batter:
Whisk flour, baking soda, and salt in a bowl.
In a larger bowl, cream butter with granulated and brown sugar until fluffy.
Beat in eggs one at a time, then add vanilla and mashed bananas.
Alternately mix in the flour mixture and buttermilk, starting and ending with dry ingredients.
3. Bake the Cake:
Pour batter into the pan, smooth the top, and bake for 30-35 minutes, or until a toothpick comes out clean. Let cool completely in the pan.
4. Make the Cream Cheese Frosting:
Beat ceam cheese and butter until smooth. Gradually add powdered sugar, mixing until fluffy. Stir in vanilla and heavy cream if using.
5. Frost the Cake:
Once cooled, spread the frosting evenly over the cake. Optionally, sprinkle with chopped nuts or chocolate chips.
6. Serve and Enjoy:
