Glazed Lamb Chops with Mashed Potatoes
Ingredients:
For the Lamb Chops:
4-6 lamb chops
2 tbsp olive oil
3 cloves garlic, minced
2 tbsp balsamic vinegar
2 tbsp honey
1 tbsp Dijon mustard
1 tbsp fresh rosemary, chopped (or 1 tsp dried)
Salt and pepper to taste
Fresh parsley for garnish
For the Mashed Potatoes:
4 large russet potatoes, peeled and quartered
4 tbsp unsalted butter
1/2 cup heavy cream (or milk)
Salt and pepper to taste
Fresh chives or parsley for garnish (optional)
Directions:
Prepare the Lamb Chops:
In a small bowl, whisk together olive oil, garlic, balsamic vinegar, honey, Dijon mustard, and rosemary. Season lamb chops with salt and pepper, then brush the marinade over both sides. Let the lamb marinate for 15-30 minutes.
Cook the Lamb Chops:
Heat a large skillet over medium-high heat. Sear the lamb chops for 3-4 minutes per side, or until they reach your preferred doneness. Remove from heat and garnish with fresh parsley.
Make the Mashed Potatoes:
In a large pot, boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash with butter, heavy cream, salt, and pepper until smooth and creamy. Garnish with fresh chives or parsley, if desired.
Serve:
Plate the glazed lamb chops alongside the mashed potatoes. Drizzle any remaining glaze over the lamb for extra flavor.
