Boston Cream Pie Cookie Bites
Ingredients
For the Cookie Bites:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
For the Vanilla Cream Filling:
1 cup milk
1/4 cup granulated sugar
1 tablespoon cornstarch
1 large egg yolk
1 teaspoon vanilla extract
For the Chocolate Ganache:
1/2 cup semi-sweet chocolate chips
1/4 cup heavy cream
Instructions
For the Cookie Bites:
Prepare the Dough: Preheat your oven to 350°F (175°C) and grease a mini muffin tin. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until smooth.
Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Bake the Cookie Cups: Scoop about 1 tablespoon of dough into each mini muffin cup, pressing gently to form a well in the center. Bake for 10-12 minutes or until the edges are golden. Remove from the oven and use the back of a spoon to press down the center of each cookie, creating a cup shape. Allow to cool in the pan.
For the Vanilla Cream Filling:
Make the Cream: In a small saucepan, combine the milk, sugar, cornstarch, and egg yolk. Cook over medium heat, whisking continuously until the mixture thickens (about 3-5 minutes). Remove from heat and stir in the vanilla extract. Let it cool, then transfer to a piping bag for easy filling.
For the Chocolate Ganache:
Make the Ganache: In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 20-second intervals, stirring until smooth and glossy. Allow it to cool slightly.
Assemble the Cookie Bites:
Fill the Cookies: Pipe the vanilla cream filling into each cooled cookie cup.
Top with Ganache: Spoon a small amount of chocolate ganache on top of each filled cookie bite, spreading it to cover the cream filling.
