These Low Carb Cauliflower Breadsticks are a delicious alternative to traditional breadsticks, perfect for those following a low-carb or keto lifestyle. Made with cauliflower, cheese, and a blend of herbs and spices, these breadsticks are flavorful, satisfying, and easy to make. Enjoy them as a snack or alongside your favorite marinara sauce for dipping.

Ingredients:
– 1 head cauliflower
– ½ cup shredded mozzarella cheese
– ½ cup shaved Parmesan cheese, plus more for garnish
– 1 large egg
– ½ tablespoon minced garlic
– ½ tablespoon fresh basil, chopped, plus more for garnish
– ½ tablespoon fresh Italian flat-leaf parsley, chopped, plus more for garnish
– 1 teaspoon salt
– ½ teaspoon black pepper
– ¾ cup shredded mozzarella cheese
– Marinara sauce for dipping

Directions:
1. Preheat oven to 425 degrees F and line a baking sheet with parchment paper or a silicone mat.
2. Rice the cauliflower by coring the head and cutting it into florets. Place it in the bowl of a food processor and pulse until it resembles rice. If the cauliflower is moist, squeeze it in a paper towel to remove excess moisture.
3. In a large bowl, mix the riced cauliflower, ½ cup shredded mozzarella cheese, Parmesan cheese, egg, garlic, basil, parsley, salt, and pepper until combined and holds together.
4. Spread the cauliflower mixture onto the prepared baking sheet, forming a rectangle about 9-inches x 7-inches and ¼-inch thick.
5. Bake for 10-12 minutes. Remove from oven and top with ¾ cup shredded mozzarella cheese. Return to oven and continue baking until the cheese is melted and starting to brown.
6. Cool for about 10 minutes, then cut into ‘breadsticks’. Garnish with fresh herbs and additional Parmesan cheese. Serve with marinara sauce for dipping.
