Fried Chicken Waffle Sandwich
Ingredients:
For the Chicken:
8 chicken tenders or fillets
Sunflower oil, for deep-frying
320g plain flour
1 tbsp cornflour
3 tsp baking powder
2 tsp cayenne pepper
1 tbsp paprika
2 tsp garlic powder
3 eggs
300ml buttermilk
3 tsp chilli powder or cayenne pepper
2 tsp garlic powder
For the Waffles:
320g plain flour
1 ¼ tsp baking powder
1 tsp bicarbonate of soda
30g light brown soft sugar
3 eggs
480ml buttermilk
50g unsalted butter, melted and slightly cooled
4 strips pancetta, cooked and finely chopped (optional)
Instructions:
Prepare Chicken:
Mix flour, cornflour, baking powder, cayenne pepper, paprika, and garlic powder.
In a separate bowl, whisk eggs, buttermilk, chili powder, and garlic powder.
Dredge chicken in the flour mixture, dip in egg mixture, then dredge in flour again.
Deep-fry chicken until golden brown.
Make Waffles:
Combine flour, baking powder, bicarbonate of soda, and sugar.
In another bowl, whisk eggs, buttermilk, and melted butter.
Mix wet and dry ingredients, fold in pancetta if using, and cook in a waffle iron.
Assemble Sandwich:
Place fried chicken between waffles and serve hot.
