Blueberry Cream Cheese Egg Rolls 
These Blueberry Cream Cheese Egg Rolls combine a tangy, creamy filling with sweet, juicy blueberries, all encased in a crispy golden shell. Perfect for dessert or a special snack, these egg rolls are sure to delight with their delicious flavor and delightful texture.
Ingredients:

For the Blueberry Filling:
• 2 cups fresh blueberries 
• ⅓ cup sugar 
• 1 tablespoon lemon juice 
• 7 tablespoons water, divided 
• 3 tablespoons cornstarch 
For the Cream Cheese Filling:
• 8 oz cream cheese, room temperature 
• ⅓ cup sugar 
• 1 teaspoon lemon juice 
• 1 teaspoon vanilla extract 
For the Egg Rolls:
• 12 egg roll wrappers 
• 2 cups vegetable oil 
• ¼ cup powdered sugar, for dusting 
Directions:

Prepare the Blueberry Filling:
1. In a small saucepan over medium heat, combine the blueberries, sugar, 3 tablespoons of water, and lemon juice.
2. Stir and cook until the blueberries burst, about 3-4 minutes after boiling.
3. In a small bowl, mix the remaining water and cornstarch until combined, then add to the blueberry mixture.
4. Continue stirring until the mixture thickens. Remove from heat and let cool.
Prepare the Cream Cheese Filling:
1. In a medium bowl, use an electric mixer to beat the cream cheese until fluffy, about 2-3 minutes.
2. Add the sugar, vanilla extract, and lemon juice. Beat for an additional 2 minutes until well combined.
Assemble the Egg Rolls:
1. Lay an egg roll wrapper on a clean surface. Place a couple of tablespoons of the cream cheese mixture in the center, followed by a heaping spoonful or two of the blueberry filling on top of the cream cheese.
2. Dip your finger in water and rub along the edges of the wrapper to help seal it.
3. Tightly fold in the sides over the filling, then roll the front edge up over the filling and towards the back to form a tight roll.
Cook the Egg Rolls:
1. Heat the vegetable oil in a large skillet over medium heat, or bring a frying pan to 375°F (190°C).
2. Add the egg rolls, a few at a time, and cook for a few minutes per side, or until golden brown.
3. Transfer the cooked egg rolls to a paper towel-lined plate to cool slightly.
Serve:
1. Sprinkle the egg rolls with powdered sugar just before serving.
