Chocolate Covered Strawberry Ches:Ingredients:esecake Bite
For the Cheesecake Bites:
16 oz (450g) cream cheese, softened
½ cup granulated sugar
1 teaspoon vanilla extract
1 large egg
½ cup strawberry puree or finely diced strawberries
1 cup graham cracker crumbs
3 tablespoons melted butter
For the Chocolate Coating:
12 oz (340g) semi-sweet or dark chocolate chips
1 tablespoon coconut oil or vegetable oil
Instructions:
Prepare the Cheesecake Base:
Preheat your oven to 325°F (160°C). Line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving some overhang to lift out the cheesecake later.
In a small bowl, mix the graham cracker crumbs with the melted butter. Press the mixture evenly into the bottom of the prepared baking pan to form a crust. Set aside. Make the Cheesecake Filling:
In a large bowl, beat the softened cream cheese until smooth. Add the sugar and vanilla extract, mixing until well combined.
Beat in the egg until fully incorporated, then fold in the strawberry puree or diced strawberries.
Pour the cheesecake mixture over the graham cracker crust, spreading it out evenly. Bake and Cool:
Bake the cheesecake for about 25-30 minutes, or until the center is set but still slightly jiggly.
Allow the cheesecake to cool to room temperature, then refrigerate for at least 3 hours or until fully chilled. Cut into Bites:
Once chilled, lift the cheesecake out of the pan using the parchment overhang. Cut the cheesecake into small, bite-sized squares. Prepare the Chocolate Coating:
In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 30-second intervals, stirring between each until smooth.
Using a fork or toothpick, dip each cheesecake bite into the melted chocolate, allowing the excess to drip off. Chill and Serve:
Place the chocolate-covered cheesecake bites on a parchment-lined baking sheet and refrigerate until the chocolate is set.
