Cheesy Breakfast Enchiladas
Ingredients:
8 flour tortillas
6 eggs, beaten
1 cup cooked ham, diced
1/2 cup green bell peppers, diced
1/2 cup red bell peppers, diced
1 cup cheddar cheese, shredded
1/2 cup onions, diced
2 cups enchilada sauce
1/2 cup fresh tomatoes, chopped
Fresh cilantro, for garnish
Salt and pepper to taste
Instructions:
Preheat oven to 375°F (190°C).
In a skillet, sauté onions, bell peppers, and ham until onions are translucent.
Add beaten eggs to the skillet, scrambling until just set. Season with salt and pepper.
Warm tortillas in the microwave to make them pliable.
Divide the egg mixture among the tortillas, sprinkle a portion of cheese inside each, and roll them up.
Place the rolled tortillas in a baking dish, seam side down.
Pour enchilada sauce over the top and sprinkle with remaining cheese.
Bake for 20 minutes or until the cheese is bubbly and golden.
Garnish with chopped tomatoes and fresh cilantro.
