Sunset Churros with Chocolate Drizzle

Ingredients:
For the Churros:
1 cup water
2 1/2 tablespoons sugar
1/2 teaspoon salt
2 tablespoons vegetable oil
1 cup all-purpose flour
Oil for frying
For the Sugar Coating:
1/2 cup sugar
1 teaspoon ground cinnamon (optional)
For the Chocolate Drizzle:
1/2 cup chocolate chips
1/4 cup heavy cream
Preparation:
Make the Churro Dough:
In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt, and 2 tablespoons oil. Bring to a boil and remove from heat.
Stir in flour until mixture forms a ball.
Heat Oil & Pipe Churros:
Heat oil for frying in a deep skillet to 375°F (190°C).
Spoon the churro dough into a piping bag fitted with a large star tip. Pipe strips of dough into the hot oil and fry until golden, about 2 minutes per side.
Remove from oil and drain on paper towels.
Coat with Sugar:
Combine 1/2 cup sugar and cinnamon in a shallow dish. Roll drained churros in sugar mixture until well coated.
Prepare Chocolate Drizzle:
In a microwave-safe bowl, combine chocolate chips and heavy cream. Microwave for 30 seconds, stir, and repeat until chocolate is melted and smooth.
Serve:
Drizzle chocolate sauce over the sugar-coated churros.
