Creamy Chicken Pasta
Ingredients:
– 2 chicken breasts
– 1 1/2 cups chicken broth
– 2 tablespoons flour
– 1/2 teaspoon garlic powder
– Salt and pepper, to taste
– 2 teaspoons Italian seasoning
– 1-2 tablespoons olive oil
– 3 tablespoons butter
– 3 cloves garlic, minced
– 1 1/4 cups half and half
– 1/2 chicken bouillon cube
– 1/3 cup grated Parmesan cheese
– 1/3 cup grated Romano cheese
– 1/2 lb pasta of choice
– 1 lemon (optional)
– 1/2 teaspoon EACH: onion powder, garlic salt, oregano, basil, mustard powder, parsley (all dried)
– 1/8 teaspoon smoked paprika
1. Cook the Chicken:
– Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Heat olive oil in a large skillet over medium heat. Cook the chicken until golden and cooked through, about 5-7 minutes per side. Remove from the skillet and set aside to rest.
2. Make the Sauce:
– In the same skillet, melt the butter. Add minced garlic and cook for about 1 minute until fragrant. Whisk in the flour and cook for 1-2 minutes, then slowly pour in the chicken broth and half and half, whisking to combine.
3. Add Seasonings and Cheese:
– Stir in the chicken bouillon cube, Parmesan cheese, Romano cheese, and dried herbs (onion powder, garlic salt, oregano, basil, mustard powder, parsley, smoked paprika). Simmer the sauce until it thickens, about 5 minutes.
4. Cook the Pasta:
– Meanwhile, cook the pasta according to package instructions. Drain and set aside.
5. Combine:
– Slice the cooked chicken and add it back to the skillet with the sauce. Toss the cooked pasta in the sauce, coating it evenly. Optionally, squeeze some lemon juice over the dish for added brightness.
6. Serve:
– Garnish with extra Parmesan cheese and parsley, if desired. Serve hot.
