Ingredients:
For the Fries:
4 large russet potatoes, peeled and cut into fries
2 tbsp vegetable oil
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
For the Chili:
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 can (6 oz) tomato paste
1 cup beef broth
2 tbsp chili powder
1 tsp cumin
1/2 tsp paprika
1/2 tsp oregano
Salt and pepper to taste
For the Cheese Topping:
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese (optional)
Instructions:
Preheat your oven to 425°F (220°C).
Toss the cut potatoes with vegetable oil, paprika, garlic powder, onion powder, salt, and pepper. Spread them out in a single layer on a baking sheet.
Bake for 25-30 minutes, flipping halfway through, until the fries are crispy and golden brown.
Cook the Chili:
In a large skillet or pot, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet and cook until the onion is softened, about 3-4 minutes.
Stir in the kidney beans, diced tomatoes, tomato paste, and beef broth. Add chili powder, cumin, paprika, oregano, salt, and pepper.
Bring to a simmer and cook for 15-20 minutes, until the chili has thickened and the flavors are well combined.
Assemble the Chili Cheese Fries:
Preheat your oven broiler to high.
Arrange the baked fries on a baking sheet or oven-safe dish. Spoon the hot chili evenly over the fries.
Sprinkle the shredded cheddar cheese (and mozzarella if using) over the top of the chili-covered fries.
Broil for 2-3 minutes, or until the cheese is melted and bubbly. Watch closely to avoid burning.
Serve:
