Ingredients:
For the Cookies:

2 1/4 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar
1/4 cup honey
1 large egg
1 tsp vanilla extract
1 tsp ground cinnamon
1/4 tsp ground cardamom (optional)
1/2 cup finely chopped walnuts
1/2 cup finely chopped pistachios
For the Cream Filling:
1/2 cup unsalted butter, softened
1 1/2 cups powdered sugar
1/4 cup honey
1 tsp vanilla extract
1/4 tsp cinnamon (optional)
For Garnish:

Chopped nuts (walnuts and pistachios)
Drizzle of honey (optional)
Instructions:
Prepare the Cookies:
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and cardamom (if using).
In a large bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy.
Add the honey, egg, and vanilla extract to the butter mixture and beat until well combined.
Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
Fold in the chopped walnuts and pistachios.
Shape and Bake the Cookies:
Roll the dough into small balls (about 1 tablespoon each) and place them on the prepared baking sheets, spacing them about 2 inches apart.
Flatten each ball slightly with the palm of your hand.
Bake for 10-12 minutes, or until the edges are golden. Let the cookies cool completely on the baking sheets.
Prepare the Cream Filling:
In a bowl, beat the butter until smooth and creamy.
Gradually add the powdered sugar and beat until light and fluffy.
Add the honey, vanilla extract, and cinnamon (if using), and beat until well combined.
Assemble the Sandwich Cookies:
Spread or pipe a generous amount of the cream filling onto the bottom of one cookie.
Place another cookie on top to create a sandwich.
Repeat with the remaining cookies and filling.
Garnish and Serve:
For extra baklava flair, sprinkle some chopped nuts on the sides of the filling and drizzle honey on top.
