WOULD YOU EAT THIS TREMENDOUS LEMON GARLIC CHICKEN LASAGNA ROLL-UPS
Ingredients:
For the Chicken Filling:
2 cups cooked chicken, shredded (preferably rotisserie chicken)
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped
2 cloves garlic, minced
Zest of 1 lemon
2 tablespoons lemon juice
Salt and pepper, to taste
For the Lasagna Roll-Ups:
12 lasagna noodles
2 cups Alfredo sauce (store-bought or homemade)
1 cup shredded mozzarella cheese (for topping)
Fresh parsley, chopped (for garnish)
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Cook the Lasagna Noodles:
Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a parchment-lined surface to cool.
Prepare the Chicken Filling:
In a large bowl, combine the shredded chicken, ricotta cheese, shredded mozzarella, grated Parmesan, parsley, minced garlic, lemon zest, lemon juice, salt, and pepper. Mix until well combined.
Assemble the Roll-Ups:
Spread a thin layer of Alfredo sauce on the bottom of the prepared baking dish.
Place about 2-3 tablespoons of the chicken filling in the center of each lasagna noodle. Carefully roll up the noodle and place it seam-side down in the baking dish.
Repeat until all the noodles are filled and placed in the dish.
Add Sauce and Cheese:
Pour the remaining Alfredo sauce evenly over the lasagna roll-ups.
Sprinkle the shredded mozzarella cheese on top.
Bake:
Bake for 25-30 minutes, or until the cheese is melted and bubbly and the roll-ups are heated through.
Garnish and Serve:
Garnish with additional chopped parsley if desired. Serve hot and enjoy!
