Ingredients:
– 3 cups ripe blackberries
– 300 g ladyfinger biscuits
– 250 g mascarpone cheese
– 200 ml heavy cream
– 150 g powdered sugar
– 50 ml water
– 2 tsp vanilla extract
– 1 tsp lemon juice
Instructions:

1. Prepare the Caramel:
– In a saucepan, heat the sugar and water over medium heat without stirring. Let the sugar dissolve and turn a golden caramel color.
– Remove from heat and carefully stir in the heavy cream, watching for bubbling. Mix until smooth and set aside to cool.
2. Prepare the Mascarpone Mixture:
– In a bowl, combine the mascarpone cheese, vanilla extract, and lemon juice.
– Gently fold in the cooled caramel to create a smooth, creamy mixture.
3. Assemble the Charlotte:
– Quickly dip the ladyfinger biscuits in water, then line the bottom and sides of a serving dish.
