– 7 quarts plain popped popcorn
– 2 cups dry roasted peanuts (optional)
– 2 cups brown sugar

– 1 teaspoon salt
– 1/2 teaspoon baking soda
– 1 teaspoon vanilla extract
Instructions:

1. Preheat and Prepare:
– Preheat your oven to 250°F (120°C). Place the popped popcorn and peanuts in a large roasting pan. Set aside.
2. Make Caramel Sauce:
– In a medium saucepan, combine brown sugar, corn syrup, butter, and salt. Bring to a boil over medium heat, stirring constantly. Once it begins to boil, stop stirring and let it boil for 5 minutes without stirring.
3. Add Baking Soda and Vanilla:
– Remove from heat and stir in baking soda and vanilla extract. The mixture will bubble up; stir until smooth.
4. Coat the Popcorn:
– Immediately pour the caramel sauce over the popcorn and peanuts, stirring well to coat evenly.
5. Bake and Stir:
– Bake in the preheated oven for 1 hour, stirring every 15 minutes to ensure even coating.
6. Cool and Break Apart:
– Remove from oven and spread the caramel corn on wax paper or a large baking sheet. Let it cool completely, then break into pieces.
