Vietnamese Fresh Spring Rolls with Peanut Dipping Sauce
Ingredients:
For the Spring Rolls:
1 package rice paper wrappers
1 lb cooked shrimp, peeled and sliced in half lengthwise
1 cup cooked rice vermicelli noodles
1 cup shredded lettuce
1/2 cup shredded carrots
1/2 cup cucumber, julienned
1/4 cup fresh mint leaves
1/4 cup fresh cilantro leaves
1/4 cup fresh basil leaves
For the Peanut Dipping Sauce:
1/4 cup creamy peanut butter
2 tbsp hoisin sauce
1 tbsp soy sauce
1 tbsp lime juice
1 garlic clove, minced
1-2 tbsp warm water (to thin the sauce)
Directions:
Prepare Ingredients: Prepare all the spring roll ingredients and have them ready for assembly.
Soften Rice Paper: Fill a large shallow dish with warm water. Dip one rice paper wrapper into the warm water for about 5 seconds to soften. Lay it flat on a clean, damp towel or cutting board.
Assemble Spring Rolls: Arrange a few pieces of shrimp, a small handful of vermicelli noodles, lettuce, carrots, cucumber, mint, cilantro, and basil on the bottom third of the rice paper.
Roll Spring Rolls: Fold the sides of the rice paper over the filling, then roll tightly from the bottom to the top to enclose the filling.
Repeat: Repeat with the remaining ingredients and rice paper wrappers.
Serve: Serve the spring rolls immediately with the peanut dipping sauce on the side.
