Japanese Soufflé Pancake
Fluffy Japanese-Style Pancakes

Ingredients:
2 large eggs, separated
2 tablespoons milk
1/4 teaspoon vanilla extract
1/4 cup all-purpose flour
1/2 teaspoon baking powder
2 tablespoons sugar
1/4 teaspoon cream of tartar
Butter for greasing the pan
Maple syrup and fresh berries for serving
Directions:
Sift in the flour and baking powder, and whisk until the batter is smooth and without lumps.
In a separate bowl, beat egg whites with cream of tartar until frothy. Gradually add sugar and continue to beat until stiff peaks form.
Gently fold the egg whites into the yolk mixture, being careful not to deflate the batter.
Preheat a non-stick skillet over low heat and grease with a small amount of butter.
Spoon the batter onto the skillet, making small, tall mounds. Cover with a lid and cook for about 4-5 minutes on each side, or until golden brown and fully cooked through.
Serve the pancakes immediately with maple syrup and fresh berries.
