Tropical Hawaiian Pineapple Delight Cake

Ingredients:

2 cups all-purpose flour
2 cups granulated sugar
2 teaspoons baking soda
1/2 teaspoon salt
2 large eggs, beaten
1 (20-ounce) can crushed pineapple, undrained
1 teaspoon vanilla extract
1/2 cup chopped pecans or walnuts (optional)
For the Frosting:
8 ounces cream cheese, softened
1/2 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
1/2 cup shredded coconut (optional, for garnish)
Directions:

Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt.
Add the beaten eggs, undrained crushed pineapple, and vanilla extract to the dry ingredients. Stir until well combined.
If desired, fold in the chopped nuts.
Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
While the cake cools, prepare the frosting. In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
Gradually add the powdered sugar and vanilla extract, beating until light and fluffy.
Once the cake has cooled completely, spread the cream cheese frosting evenly over the top.
Garnish with shredded coconut if desired. Chill in the refrigerator for at least 1 hour before serving.
