Ingredients:
4 large flour tortillas
8 oz cream cheese, softened
1/4 cup powdered sugar
1 tsp vanilla extract
1 cup strawberries, sliced
2 tbsp butter (for cooking)
Optional: Whipped cream, chocolate syrup, or more strawberries for serving
Directions:
Make the Cheesecake Filling:
In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Assemble the Quesadillas:
Lay out the tortillas and spread a generous layer of the cheesecake mixture on one half of each tortilla.
Add a layer of sliced strawberries over the cream cheese filling.
Fold the tortilla in half to enclose the filling.
Cook the Quesadillas:
In a large skillet, melt 1 tbsp of butter over medium heat.
Place the folded quesadillas in the skillet (one or two at a time, depending on the size of your skillet) and cook for 2-3 minutes on each side, until golden brown and crispy.
Add more butter as needed for the remaining quesadillas.
Serve:
Slice each quesadilla into wedges and serve warm.
Garnish with whipped cream, a drizzle of chocolate syrup, or extra strawberries if desired.
Tip: For an extra treat, sprinkle some cinnamon sugar on the quesadillas before cooking!
