Cheesy Chicken Enchiladas with Creamy Sauce
These Cheesy Chicken Enchiladas are a comforting, delicious dish loaded with tender chicken, gooey cheese, and topped with a smooth, creamy sauce. Perfect for a family dinner night that’ll leave everyone satisfied!
Ingredients:
3 cups cooked, shredded chicken
2 cups shredded cheddar or Mexican blend cheese
8 flour tortillas
2 tbsp butter
2 tbsp flour
1 1/2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chilies (optional)
Salt and pepper to taste
Directions:
Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
Assemble Enchiladas:
In each tortilla, place a generous amount of shredded chicken and a handful of cheese. Roll up each tortilla and place seam-side down in the prepared baking dish.
Prepare the Creamy Sauce:
In a saucepan, melt butter over medium heat. Stir in the flour and cook for about 1 minute. Slowly whisk in the chicken broth until smooth and thickened. Remove from heat and stir in the sour cream and green chilies. Season with salt and pepper.
Pour Sauce:
