Watergate Salad
Ingredients:
1 can (20 oz) crushed pineapple, undrained
1 package (3.4 oz) instant pistachio pudding mix
1 cup mini marshmallows
1/2 cup chopped walnuts or pecans
1 container (8 oz) whipped topping (like Cool Whip), thawed
1/2 cup sweetened shredded coconut (optional)
Maraschino cherries for garnish (optional)
Instructions:
In a large mixing bowl, combine the crushed pineapple (including the juice) with the instant pistachio pudding mix. Stir until the pudding mix is completely dissolved and the mixture thickens.
Fold in the Remaining Ingredients:
Gently fold in the mini marshmallows, chopped walnuts or pecans, and shredded coconut (if using). Once combined, fold in the whipped topping until the mixture is light and fluffy.
Chill:
Cover and refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together.
Serve:
