Berry Swirl Cheesecake Bites 
Ingredients:

For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup sour cream
For the Berry Swirl:
1/2 cup fresh or frozen berries (strawberries, raspberries, or blueberries)
2 tbsp granulated sugar
1 tbsp lemon juice
Instructions:

Preheat the Oven:
Preheat your oven to 325°F (165°C). Line a 12-cup muffin tin with paper liners.
Prepare the Crust:

In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottoms of the muffin cups to form an even layer. Bake for 5 minutes, then set aside to cool.
Make the Berry Swirl:

In a small saucepan, combine the berries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens (about 5-7 minutes). Strain through a fine mesh sieve to remove the seeds and set the berry sauce aside to cool.
Prepare the Cheesecake Filling:

In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and sour cream.
Assemble the Cheesecake Bites:

Spoon the cheesecake filling evenly over the cooled crusts in the muffin cups. Drop small spoonfuls of the berry sauce on top of each cheesecake, then use a toothpick to gently swirl the sauce into the filling.
Bake:

Bake for 18-20 minutes, or until the cheesecakes are set but still slightly jiggly in the center. Remove from the oven and let them cool completely at room temperature, then refrigerate for at least 2 hours before serving.
