Ingredients:
Chicken:
1 whole chicken (about 4-5 lbs), spatchcocked or cut into pieces
1/4 cup olive oil
1/4 cup fresh lime juice
4 cloves garlic, minced
1 tbsp ground cumin
1 tbsp paprika
2 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
Green Sauce:
1 cup fresh cilantro leaves
1/2 cup mayonnaise
1/4 cup sour cream or Greek yogurt
2 cloves garlic, minced
1 jalapeño, seeded and chopped
2 tbsp fresh lime juice
1 tbsp olive oil
1 tsp white vinegar
1/2 tsp salt
1/4 tsp black pepper
Instructions:
Marinate the Chicken:
Rub the marinade all over the chicken, ensuring it is well coated. Cover and refrigerate for at least 2 hours, or preferably overnight.
Prepare the Green Sauce:
In a blender or food processor, combine the fresh cilantro leaves, mayonnaise, sour cream or Greek yogurt, minced garlic, chopped jalapeño, fresh lime juice, olive oil, white vinegar, salt, and black pepper.
