Ingredients:
2 racks of lamb, frenched (about 1.5-2 lbs each)
Salt and black pepper to taste
4 cloves garlic, minced
2 tbsp fresh rosemary, finely chopped
2 tbsp fresh thyme, finely chopped
1/4 cup olive oil
2 tbsp Dijon mustard
1 tbsp lemon zest
Instructions:
Prepare the Lamb:

Preheat your oven to 450°F (230°C).
Season the racks of lamb generously with salt and black pepper.
Make the Herb Mixture:
In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, olive oil, Dijon mustard, and lemon zest. Mix well.
Coat the Lamb:
Rub the herb mixture all over the racks of lamb, ensuring they are well coated.
Sear the Lamb:
In a large oven-safe skillet, heat a small amount of olive oil over medium-high heat.
Add the racks of lamb, fat side down, and sear for 2-3 minutes until browned. Flip and sear the other side for an additional 2-3 minutes.
Roast the Lamb:
Transfer the skillet to the preheated oven.
Roast the lamb for 15-20 minutes for medium-rare, or until the internal temperature reaches 125°F (52°C). Adjust the cooking time according to your preferred level of doneness:
Medium: 130-135°F (54-57°C)
Medium-well: 140-145°F (60-63°C)
Rest the Lamb:
Remove the racks of lamb from the oven and transfer them to a cutting board.
Tent with aluminum foil and let them rest for 10 minutes to allow the juices to redistribute.
Serve:
Slice the racks of lamb into individual chops.
Arrange the chops on a serving platter and garnish with additional fresh rosemary if desired.
