Cheesy Sloppy Joe Casserole with Biscuit Topping
Ingredients
For the Sloppy Joe Filling:
1 lb ground beef
1 small onion, diced
1 small green bell pepper, diced
2 cloves garlic, minced
1 cup ketchup
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon mustard
1/4 cup tomato paste
Salt and pepper to taste
1/2 teaspoon smoked paprika (optional)
1 cup shredded cheddar cheese
For the Biscuit Topping:
1 can refrigerated biscuit dough (8 biscuits)
1 tablespoon butter, melted (for brushing)
1 teaspoon garlic powder (optional)
Instructions
Cook the Ground Beef: In a large skillet, brown the ground beef over medium heat until fully cooked, about 5-7 minutes. Drain any excess fat.
Add Vegetables and Seasoning: Add the diced onion, bell pepper, and minced garlic to the skillet and cook for another 3-4 minutes until softened.
Make the Sloppy Joe Sauce: Stir in the ketchup, brown sugar, Worcestershire sauce, mustard, and tomato paste. Season with salt, pepper, and smoked paprika. Let the mixture simmer for 5-10 minutes to allow the flavors to meld together.
Add Cheese: Sprinkle 1 cup of shredded cheddar cheese over the filling and let it melt.
For the Biscuit Topping:
Prepare the Topping: Preheat your oven to 375°F (190°C). Transfer the sloppy joe mixture to a 9×13-inch baking dish. Place the biscuits on top of the mixture.
Bake: Bake in the preheated oven for 15-20 minutes or until the biscuits are golden brown and fully cooked through.
Brush with Butter: Brush the biscuits with melted butter and sprinkle with garlic powder for extra flavor.
Serve and Enjoy: Let the casserole cool slightly before serving. Serve with a side salad or vegetables for a complete meal.
