Ingredients:
For the Battered Cod:
4 cod fillets (4-6 oz each)
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp baking powder
1 tsp salt
1/2 tsp paprika
1/2 tsp garlic powder
1 cup cold beer (or sparkling water)
Vegetable oil for frying
Lemon wedges, for serving
For the Onion Rings:
2 large onions, sliced into thick rings
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp baking powder
1 tsp salt
1/2 tsp paprika
1/2 tsp onion powder
1 cup cold beer (or sparkling water)
Vegetable oil for frying
Instructions:
In a large bowl, combine the flour, cornstarch, baking powder, salt, paprika, and garlic powder for the cod. Gradually whisk in the cold beer (or sparkling water) until smooth. The batter should be thick but pourable. In a separate bowl, prepare the same batter for the onion rings, using onion powder in place of garlic powder.
Fry the Cod:
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Pat the cod fillets dry with paper towels. Dip each fillet into the batter, letting the excess drip off, then carefully place it into the hot oil.
Fry the cod for 4-5 minutes, or until golden brown and crispy. Remove and drain on paper towels.
Fry the Onion Rings:
Dip the onion rings into the batter, allowing the excess to drip off. Fry the onion rings in batches in the same hot oil until they turn golden and crispy, about 2-3 minutes per batch. Remove and drain on paper towels.
