Instructions:
Make the black velvet cake layers: Preheat oven to 350°F (177°C). Grease and flour two 8-inch cake pans. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in buttermilk, sour cream, food coloring, and vanilla. Gradually add dry ingredients and mix until smooth. Divide the batter between pans and bake for 30-35 minutes. Let cool completely.
Make the Oreo cheesecake layer: Preheat oven to 325°F (163°C). Line an 8-inch springform pan with parchment paper. Beat cream cheese and sugar until smooth. Add eggs and vanilla extract. Fold in crushed Oreos. Pour the mixture into the pan and bake for 45-50 minutes. Cool completely and refrigerate.
Make the cream cheese frosting: Beat butter and cream cheese until smooth. Gradually add powdered sugar and vanilla extract. Beat until light and fluffy.
Assemble the cake: Place one black velvet cake layer on a serving plate. Top with the Oreo cheesecake layer, then add the second black velvet cake layer. Frost the entire cake with cream cheese frosting.
Make the ganache drip: Heat heavy cream until simmering, then pour over chocolate chips. Let sit for 2 minutes, then stir until smooth. Allow to cool slightly, then drizzle over the top of the cake, letting it drip down the sides.
Garnish: Decorate with crushed Oreos and whole Oreos on top for a stunning finish.
