Classic Chicken Piccata with Lemon Caper Sauce
Ingredients:
4 boneless, skinless chicken breasts
Salt and black pepper to taste
1/2 cup all-purpose flour
4 tbsp unsalted butter, divided
2 tbsp olive oil
1/2 cup chicken broth
1/4 cup fresh lemon juice (about 2 lemons)
1/4 cup capers, drained and rinsed
1/4 cup fresh parsley, chopped
Directions:
Prepare Chicken: Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch. Season both sides of the chicken breasts with salt and black pepper, then dredge them in the flour, shaking off any excess.
Cook Chicken: In a large skillet, heat 2 tablespoons of butter and the olive oil over medium-high heat until the butter is melted and sizzling. Add the chicken breasts to the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through. Transfer the chicken to a plate and keep warm.
Make Sauce: In the same skillet, add the chicken broth, lemon juice, and capers. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan.
Return Chicken: Return the chicken breasts to the skillet and cook for an additional 2 minutes, spooning the sauce over the chicken.
Finish Sauce: Remove the skillet from the heat and stir in the remaining 2 tablespoons of butter until melted and the sauce is smooth.
Serve: Sprinkle with fresh parsley and serve immediately.
