Classic Spaghetti Shrimp Scampi with Garlic and Lemon
Ingredients:
8 oz spaghetti
1 lb large shrimp, peeled and deveined
4 tbsp unsalted butter
2 tbsp olive oil
4 cloves garlic, minced
1/2 cup dry white wine
1/4 cup fresh lemon juice
1/4 tsp red pepper flakes (optional)
Salt and black pepper to taste
1/4 cup fresh parsley, chopped
Lemon wedges for serving
Directions:
Cook Spaghetti: Cook the spaghetti in a large pot of salted boiling water according to the package instructions. Drain and set aside.
Heat Butter and Oil: In a large skillet, heat the butter and olive oil over medium-high heat until the butter is melted and sizzling.
Sauté Garlic: Add the minced garlic and sauté for about 1 minute, until fragrant.
Cook Shrimp: Add the shrimp to the skillet and season with salt, black pepper, and red pepper flakes (if using). Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
Add Wine and Lemon Juice: Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer and cook for an additional 2-3 minutes, until the sauce has slightly thickened.
Combine with Spaghetti: Add the cooked spaghetti to the skillet and toss to coat in the sauce.
Finish with Parsley: Remove from heat and stir in the chopped parsley.
Serve: Serve immediately with lemon wedges on the side.
