WOULD YOU EAT THIS TREMENDOUS CHARRED LEMON-OREGANO OCTOPUS
Ingredients:
2 pounds octopus, cleaned
1/4 cup olive oil
1 lemon, zested and juiced
3 cloves garlic, minced
2 tablespoons fresh oregano leaves, chopped (or 1 tablespoon dried oregano)
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
Lemon wedges, for serving
Instructions:
Prepare the Marinade:
In a bowl, mix together the olive oil, lemon zest, lemon juice, minced garlic, chopped oregano, smoked paprika, salt, and black pepper.
Marinate the Octopus:
Place the cleaned octopus in a large resealable plastic bag or a shallow dish. Pour the marinade over the octopus, making sure it’s well-coated.
Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for best flavor.
Grill the Octopus:
Preheat your grill to medium-high heat.
Remove the octopus from the marinade and pat dry with paper towels.
Grill the octopus for about 4-5 minutes per side, or until it’s nicely charred and has grill marks. The octopus should be tender and slightly crispy on the edges.
Serve:
Slice the grilled octopus into bite-sized pieces and serve with additional lemon wedges on the side for squeezing over the top.
