Ingredients:
For the Battered Cod:
1 lb cod fillets, cut into strips
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon garlic powder
½ teaspoon paprika
1 cup cold sparkling water
Salt and pepper to taste
Oil for frying
For the Onion Rings:
2 large onions, sliced into rings
1 cup buttermilk
1 cup all-purpose flour
½ teaspoon paprika
½ teaspoon garlic powder
Oil for frying
For the Tacos:
8 small flour tortillas
1 cup shredded cabbage
½ cup sour cream
1 tablespoon lime juice
1 teaspoon hot sauce (optional)
Fresh cilantro for garnish
Lime wedges for serving
Instructions:
Prepare the Battered Cod:
In a bowl, whisk together the flour, baking powder, garlic powder, paprika, salt, and pepper. Slowly add the sparkling water and stir until smooth.
Heat oil in a deep skillet or fryer to 350°F (175°C). Dip the cod fillets into the batter, allowing excess to drip off, and fry for 4-6 minutes until golden and crispy. Drain on paper towels.
Make the Onion Rings:
Soak the onion rings in buttermilk for about 15 minutes.
In another bowl, mix the flour, paprika, and garlic powder. Heat oil in a separate skillet. Dredge the onion rings in the flour mixture, shaking off the excess, and fry until golden and crispy. Drain on paper towels.
Prepare the Tacos:
In a small bowl, mix the sour cream, lime juice, and hot sauce (if using). Warm the tortillas on a skillet or in the oven.
Place some shredded cabbage on each tortilla, top with a piece of battered cod, and drizzle with the lime sour cream mixture. Garnish with fresh cilantro.
