WOULD YOU EAT THIS TREMENDOUS CRISPY BATTERED COD AND ONION RINGS PLATTER
Ingredients:
For the Crispy Battered Cod:
4 cod fillets (6 oz each)
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp black pepper
1 cup cold sparkling water (or club soda)
Vegetable oil, for frying
For the Onion Rings:
1 large onion, sliced into rings
1 cup all-purpose flour
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
1 cup buttermilk
1 cup panko breadcrumbs
Vegetable oil, for frying
For Serving:
Lemon wedges
Tartar sauce
Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Onion Rings:
Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
In a bowl, combine flour, garlic powder, onion powder, paprika, salt, and pepper.
Dip onion rings into the flour mixture, then into buttermilk, and back into the flour mixture. Coat well.
Dredge the rings in panko breadcrumbs, pressing lightly to adhere.
Fry the onion rings in batches until golden brown and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels.
Prepare the Crispy Battered Cod:
In a large bowl, whisk together flour, baking powder, salt, and pepper. Gradually add cold sparkling water, mixing until a smooth batter forms.
Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
Dip cod fillets into the batter, allowing excess to drip off, and carefully lower into the hot oil. Fry until golden brown and cooked through, about 4-5 minutes per side.
Remove from oil and drain on paper towels.
Serve:
Arrange the crispy battered cod and onion rings on a platter. Garnish with lemon wedges and fresh parsley.
Serve with tartar sauce on the side.
