Hawaiian Pineapple Cake

Ingredients:
Cake:
• 2 cups all-purpose flour
• 1 1/2 cups granulated sugar
• 1 tsp baking soda
• 1/2 tsp salt
• 2 large eggs
• 1 (20 oz) can crushed pineapple with juice
• 1 tsp vanilla extract
• 1/2 cup chopped walnuts (optional)
Frosting:
• 8 oz cream cheese, softened
• 1/4 cup unsalted butter, softened
• 2 cups powdered sugar
• 1 tsp vanilla extract
• 1/2 cup shredded sweetened coconut (optional for garnish)
• 1/4 cup chopped pecans (optional for garnish)
Directions:
1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
2. Mix the Dry Ingredients: In a large bowl, whisk together flour, sugar, baking soda, and salt.
3. Mix the Wet Ingredients: Add the eggs, crushed pineapple with juice, and vanilla extract to the dry ingredients. Stir until combined. If desired, fold in the chopped walnuts.
4. Bake the Cake: Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.
5. Make the Frosting: In a large bowl, beat the softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until creamy and well combined.
