Seared Filet Mignon with Herb Butter and Creamy Mashed Potatoes

Ingredients:
For the Filet Mignon:
2 filet mignon steaks (each 6 oz)
Salt and freshly ground black pepper, to taste
2 tbsp olive oil
2 tbsp butter
Fresh thyme
For the Herb Butter:
1/4 cup unsalted butter, softened
1 tsp fresh thyme, finely chopped
1 tsp fresh rosemary, finely chopped
1 garlic clove, minced
Salt, to taste
For the Mashed Potatoes:
4 large potatoes, peeled and cubed
1/4 cup heavy cream
2 tbsp unsalted butter
Salt and pepper, to taste
Instructions:
Prepare the Herb Butter:
In a small bowl, combine the softened butter with chopped thyme, rosemary, minced garlic, and salt. Mix until well blended. Set aside.
Cook the Mashed Potatoes:
Boil the potatoes in salted water until tender, about 15-20 minutes.
Drain and return to the pot. Add heavy cream and butter, then mash until smooth and creamy. Season with salt and pepper. Keep warm.
Cook the Filet Mignon:
Season the steaks generously with salt and pepper.
Heat olive oil in a skillet over medium-high heat. When hot, add the steaks and cook for 4-5 minutes on each side for medium-rare, or until desired doneness.
Add butter and thyme to the pan in the last minute of cooking, spooning the melted butter over the steaks continuously.
Serve:
Place a hearty scoop of mashed potatoes on each plate. Top with a filet mignon.
Spoon some herb butter over the steak and let it melt deliciously.
