Banana Icebox Cake
Luscious Layered Banana Cream Delight
Ingredients:
1 box vanilla wafers
3 cups heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
3 ripe bananas, sliced
1 (3.4 oz) package instant banana pudding mix
1 1/2 cups cold milk
Directions:
In a large bowl, combine heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer until stiff peaks form.
In another bowl, whisk together banana pudding mix and cold milk until smooth. Let sit for 5 minutes to thicken.
In a 9×13 inch dish, layer vanilla wafers, followed by a layer of sliced bananas, and then a layer of whipped cream. Repeat the layers until all ingredients are used, finishing with a layer of whipped cream.
Refrigerate for at least 4 hours, or overnight, to allow the cake to set.
