Apple Enchiladas
Caramelized Apple Cinnamon Enchiladas
Ingredients:
6 tortillas (flour or whole wheat)
4 apples, peeled, cored, and sliced
1/4 cup butter
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/3 cup water
Vanilla ice cream (for serving)
Directions:
Preheat oven to 350°F (175°C).
In a saucepan over medium heat, melt butter and add brown sugar, cinnamon, and nutmeg, stirring until sugar is dissolved.
Add apples and water to the saucepan. Cook for about 10 minutes until apples are soft.
Divide the apple mixture among the tortillas, roll them up, and place seam side down in a baking dish.
Pour the remaining sauce from the pan over the enchiladas.
Bake for 20 minutes, until the tortillas are golden brown.
Serve warm with vanilla ice cream.
