Date Walnut Loaf
Ingredients:
1 cup (200g) pitted dates, chopped
1 cup (240ml) boiling water
1 tsp baking soda
1/2 cup (115g) unsalted butter, softened
3/4 cup (150g) brown sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cups (190g) all-purpose flour
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
1 cup (100g) walnuts, chopped
Directions:
Preheat your oven to 350°F (175°C). Grease and line a 9×5 inch loaf pan with parchment paper.
In a medium bowl, pour the boiling water over the chopped dates and stir in the baking soda. Let the mixture cool.
In a large bowl, cream the butter and brown sugar together until light and fluffy.
Beat in the eggs, one at a time, followed by the vanilla extract.
In a separate bowl, sift together the flour, baking powder, cinnamon, and salt.
Gradually add the dry ingredients to the wet mixture, alternating with the date mixture. Stir until just combined.
Fold in the chopped walnuts.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
