Sunset Fiesta Tacos
Ingredients:
1 lb flank steak, thinly sliced
1 tbsp olive oil
2 tsp cumin
2 tsp smoked paprika
Salt and pepper, to taste
12 corn tortillas
1/2 cup finely chopped onion
1/2 cup chopped cilantro
1 cup diced tomatoes
Lime wedges, for serving
Salsa:
1 cup diced tomatoes
1/4 cup chopped onion
1/4 cup chopped cilantro
1 jalapeño, minced (optional)
Juice of 1 lime
Salt, to taste
Instructions:
Marinate the Beef: In a bowl, mix olive oil, cumin, paprika, salt, and pepper. Add the beef and toss to coat. Let marinate for at least 30 minutes.
Prepare the Salsa: Combine all salsa ingredients in a bowl. Adjust seasoning with salt and lime juice. Set aside to let the flavors meld.
Cook the Beef: Heat a skillet over medium-high heat. Add the marinated beef and cook until browned and cooked through, about 5-6 minutes.
Warm the Tortillas: Heat tortillas on a dry skillet or directly over a low flame
until warm and slightly charred.
Assemble the Tacos: Place some cooked beef on each tortilla, top with onions, cilantro, and diced tomatoes. Spoon over some fresh salsa.
Serve: Offer lime wedges on the side for squeezing over tacos.
