Peach Cobbler Cookies 
Ingredients:
Crumble:
4 tbsp butter (melted) 
1/4 cup brown sugar 
1 tbsp granulated sugar 
1/2 cup all-purpose flour 
A few sprinkles of cinnamon 
Cookie Dough:

1 stick butter (softened) 
1/2 cup brown sugar 
1/2 cup granulated sugar 
1 whole egg 
1 egg yolk 
2 cups flour 
2 tsp baking powder 
1 tsp vanilla extract 
Peach Filling:
1/4 cup canned peach filling 
4 dashes cinnamon 
1 dash nutmeg 
Coating:
1/ cup cane sugar 
A couple of dashes of cinnamon

Directions:
Prepare the Crumble:
In a bowl, combine melted butter, brown sugar, granulated sugar, all-purpose flour, and a few sprinkles of cinnamon. Mix well and set aside. 
Make the Cookie Dough:
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. 
Add the whole egg, egg yolk, and vanilla extract. Mix until combined. 
Gradually add the flour and baking powder to the mixture. Mix until a dough forms. 
Prepare the Peach Filling:
In a small bowl, mix the canned peach filling with cinnamon and nutmeg. Set aside. 
Assemble the Cookies:
Preheat the oven to 350°F (175°C).
Scoop out balls of cookie dough and flatten them slightly.
Create a small indentation in the center of each dough ball and fill with a small amount of the peach filling.
Sprinkle the crumble mixture over the top.
Coat the Cookies:
In a separate bowl, mix the cane sugar with a couple of dashes of cinnamon. 
Roll the edges of the cookies in the cinnamon sugar mixture.
Bake:
Place the cookies on a baking sheet lined with parchment paper.
Bake for 12-15 minutes, or until the edges are golden brown.
Let the cookies cool on a wire rack.
