Ingredients:
Meatloaf:
1 1/2 lbs ground beef
1/2 cup breadcrumbs
1 small onion, finely chopped
2 cloves garlic, minced
1 large egg
1/4 cup milk
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried oregano
Salt and black pepper to taste
Gravy:
2 tbsp unsalted butter
2 tbsp all-purpose flour
2 cups beef broth
1 tbsp Worcestershire sauce
Salt and black pepper to taste
Mashed Potatoes:
4 large russet potatoes, peeled and cubed
1/2 cup whole milk
4 tbsp unsalted butter
Salt and black pepper to taste
1/4 cup sour cream (optional)
Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Meatloaf:


Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
In a large bowl, combine the ground beef, breadcrumbs, finely chopped onion, minced garlic, egg, milk, ketchup, Worcestershire sauce, dried thyme, dried oregano, salt, and black pepper. Mix until well combined.
Shape the mixture into a loaf and place it on the prepared baking sheet.
Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
Prepare the Mashed Potatoes:
While the meatloaf is baking, place the peeled and cubed potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add the milk and butter, and mash until smooth and creamy. Season with salt and black pepper to taste. Stir in the sour cream if using. Keep warm.
Prepare the Gravy:
In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, until lightly browned.
Gradually add the beef broth, whisking constantly to prevent lumps.
Stir in the Worcestershire sauce and bring the mixture to a simmer. Cook for 5-7 minutes, or until the gravy thickens. Season with salt and black pepper to taste.
Serve:
Slice the meatloaf and serve it with a generous helping of mashed potatoes.
Spoon the gravy over the meatloaf and mashed potatoes.
Garnish with chopped fresh parsley.
