Savory Lemon Butter Cod Fillets
Ingredients:
4 cod fillets
Salt and pepper to taste
1/4 cup all-purpose flour
2 tablespoons olive oil
4 tablespoons unsalted butter, divided
3 cloves garlic, minced
1 cup chicken broth
1/4 cup fresh lemon juice
1 tablespoon fresh parsley, chopped
Lemon slices, for garnish
Directions:
Prepare the Cod:
Season the cod fillets with salt and pepper. Dredge each fillet in flour, shaking off any excess.
Cook the Cod:
In a large skillet, heat olive oil over medium-high heat. Add 2 tablespoons of butter and let it melt.
Add the cod fillets to the skillet and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the fillets from the skillet and set aside.
Make the Sauce:
In the same skillet, add the remaining 2 tablespoons of butter and minced garlic; sauté for about 1 minute until fragrant.
Pour in the chicken broth and fresh lemon juice. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet.
Combine and Heat:
Return the cod fillets to the skillet and spoon the sauce over them. Simmer for 2-3 minutes until the cod is heated through.
Serve:
Garnish with fresh parsley and lemon slices before serving.
