Ingredients:

For the Fish Batter:

1 cup all-purpose flour
1/2 cup cornstarch
1 tsp baking powder
1/2 tsp salt
1/2 tsp black pepper
1 cup cold sparkling water (or club soda)
1 large egg, beaten
1 lb white fish fillets (such as cod or haddock), cut into pieces
For the Fries:

4 large russet potatoes, peeled and cut into fries
2 tbsp vegetable oil
Salt to taste
Instructions:

Prepare the fries: Preheat your oven to 425°F (220°C). Toss the cut potatoes with vegetable oil and spread them in a single layer on a baking sheet. Bake for 30-35 minutes, or until crispy and golden brown, flipping halfway through. Season with salt while still hot.

Make the fish batter: In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper. Add the beaten egg and cold sparkling water, mixing until smooth. The batter should be thick enough to coat the fish but still runny enough to dip.

Heat the oil: Pour vegetable oil into a deep fryer or large skillet to a depth of about 2 inches. Heat the oil to 350°F (175°C).

Cook the fish: Dip the fish pieces into the batter, allowing excess to drip off, and carefully place them into the hot oil. Fry in batches, without overcrowding, for 4-5 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve: Serve the crispy fish alongside the hot fries. Enjoy with your favorite tartar sauce or malt vinegar!
