Cinnamon Roll Honeybun Cheesecake
Ingredients:
For the Crust:
2 cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
1 tsp ground cinnamon
For the Cheesecake Filling:
24 oz (680g) cream cheese, softened
1 cup granulated sugar
½ cup sour cream
1 tsp vanilla extract
3 large eggs
¼ cup all-purpose flour
For the Cinnamon Swirl:
½ cup light brown sugar, packed
2 tbsp ground cinnamon
2 tbsp unsalted butter, melted
For the Honeybun Glaze:
1 cup powdered sugar, sifted
2 tbsp milk
1 tbsp honey
1 tsp vanilla extract
Instructions:
1️⃣ Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan and wrap the outside with foil to prevent leaks. 🧈
2️⃣ For the crust, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon in a bowl. Press the mixture into the bottom of the prepared springform pan to form an even layer. Bake for 10 minutes, then set aside to cool. 🥄
3️⃣ For the cheesecake filling, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the sour cream and vanilla extract, mixing until combined. 🍰
4️⃣ Add the eggs one at a time, beating on low speed after each addition. Mix in the flour until just combined. Be careful not to overmix. 🍳
5️⃣ For the cinnamon swirl, mix the brown sugar, ground cinnamon, and melted butter in a small bowl until well combined. 🌀
6️⃣ Pour half of the cheesecake batter over the cooled crust. Drop spoonfuls of the cinnamon swirl mixture over the batter, then use a knife to swirl it gently. Pour the remaining cheesecake batter on top, and repeat with the rest of the cinnamon swirl mixture. 🥄
7️⃣ Bake the cheesecake for 50-60 minutes, or until the center is almost set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside with the door slightly open for about an hour. 🌬️
8️⃣ Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight to set completely. ❄️
9️⃣ For the honeybun glaze, whisk together the powdered sugar, milk, honey, and vanilla extract until smooth. Drizzle the glaze over the chilled cheesecake before serving. 🍯
