Next Level Fish & Chips
Ingredients:
4 large potatoes, peeled and cut into thick chips
1 tablespoon vegetable oil
4 cod fillets (about 6 oz/170g each), skinless and boneless
1 cup (120g) all-purpose flour
1 teaspoon baking powder
1 teaspoon paprika
1 teaspoon garlic powder
1 cup (240ml) cold sparkling water
1 teaspoon salt
1/2 teaspoon black pepper
1 lemon, cut into wedges
Fresh parsley, chopped (for garnish)
Instructions:
Preheat the oven to 220°C (430°F). Toss the potato chips in vegetable oil and spread them out on a baking tray. Bake for 25-30 minutes, turning halfway, until crispy and golden.
For the batter, in a large bowl, mix the flour, baking powder, paprika, garlic powder, salt, and black pepper. Gradually whisk in the cold sparkling water until smooth.
Heat oil in a large pan over medium-high heat.
Dip each cod fillet into the batter, then carefully place in the hot oil. Fry for 4-5 minutes per side, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Serve the fish with the crispy chips, lemon wedges, and fresh parsley.
