Cranberry Pistachio White Chocolate Truffles
Decadent Cranberry Pistachio Truffles with White Chocolate
Recipe
Ingredients:
1 cup dried cranberries
1 cup shelled pistachios, finely chopped
1 lb white chocolate, chopped
1/2 cup heavy cream
1 teaspoon vanilla extract
Directions:
In a microwave-safe bowl, combine the white chocolate and heavy cream. Heat in the microwave for 30 seconds, stir, and continue heating in 10-second intervals, stirring between each, until smooth.
Stir in the vanilla extract, then fold in the cranberries and pistachios.
Chill the mixture in the refrigerator for 2 hours or until firm.
Once firm, scoop out teaspoon-sized amounts and roll into balls.
Roll each truffle in additional chopped pistachios, if desired. Store in a cool place until ready to serve.
