Spiced Oatmeal Fritters with Coconut Caramel Pears

Ingredients:
250ml almond milk
½ tsp ground cloves
1 tsp ground nutmeg
4 tsp ground cinnamon
100g rolled oats
3 large eggs
2 tbsp golden caster sugar
75g coconut butter
2 firm Williams pears, peeled, cored, and thinly sliced
200g coconut yogurt, to serve
Method:

Prepare the Oatmeal:
In a medium saucepan, heat the almond milk with the ground cloves, ground nutmeg, and 2 tsp of the ground cinnamon over medium heat until it just begins to simmer.
Stir in the rolled oats and cook, stirring frequently, until the mixture thickens and the oats are tender, about 5-7 minutes. Remove from heat and let cool slightly.

Make the Fritter Batter:
In a large bowl, beat the eggs and golden caster sugar together until well combined.
Stir the cooked oatmeal into the egg mixture until well incorporated.

Cook the Fritters:
Heat a portion of the coconut butter in a large frying pan over medium heat.
Once the butter is hot, drop spoonfuls of the oatmeal mixture into the pan, flattening them slightly to form fritters.
Cook for 3-4 minutes on each side until golden brown and cooked through. Repeat with the remaining mixture, adding more coconut butter as needed.

Caramelize the Pears:
In a separate pan, melt the remaining coconut butter over medium heat.
Add the sliced pears and sprinkle with the remaining 2 tsp of ground cinnamon.
Cook the pears, turning occasionally, until they are caramelized and tender, about 5-7 minutes.
Serve:
Serve the warm fritters topped with the caramelized pears.
Add a dollop of coconut yogurt on the side.
