Beef & Cheese Empanadas
Ingredients:
1 lb ground beef
1 small onion, finely diced
2 cloves garlic, minced
1 tsp ground cumin
1 tsp smoked paprika
Salt and pepper to taste
1 1/2 cups shredded cheddar or Monterey Jack cheese
1 package (10-count) empanada dough discs (store-bought or homemade)
1 egg, beaten (for egg wash)

Instructions:
In a large skillet over medium heat, cook the ground beef, diced onion, and minced garlic until the beef is browned and fully cooked. Drain any excess fat.
Add cumin, smoked paprika, salt, and pepper to taste. Stir to combine and cook for another 2-3 minutes to let the flavors meld together. Remove from heat and allow the beef mixture to cool slightly.
Assemble the Empanadas:
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Place about 2 tablespoons of the beef mixture and a sprinkle of shredded cheese onto the center of each empanada dough disc. Fold the dough in half to create a half-moon shape and crimp the edges with a fork to seal.
Bake the Empanadas:
Brush the top of each empanada with the beaten egg for a golden finish. Place the empanadas on the prepared baking sheet and bake for 20-25 minutes, or until the dough is golden brown and crispy.

Serve warm with sour cream, salsa, or guacamole for dipping.
